Hakka Thunder Tea Rice is super popular workday lunchbox in Singapore. I couldn't find anyone doing it here in the UK so I started doing it myself! It proved to be a hit with my lovely North London neighbours! Imagine an all vegan Chinese style bibimbap or poke rice bowl chock full of colour veggies, home-pickled mushrooms, spiced chickpeas and a herbaceous pesto. All the health, all the flavour. A power-up to see you through that afternoons shift! 

Ingredients:
Organic Kerala red matta rice, organic red cabbage, organic carrot, organic black chickpea, organic white chickpea, shitake mushroom, cloud ear mushroom, tomato, onion, garlic, ginger, coriander, sweet basil, mint, spring onions, rapeseed oil, sea salt, white pepper, gluten-free light soya sauce, organic unrefined cane sugar, ground cumin, ground coriander, peanuts 

Allergens:

Peanuts, sesame, soybeans

Storage instructions:

Keep in fridge – 3 days
Keep in freezer – 3 months
Once defrosted do not refreeze

Heating instructions:

Remove contents from compostable packaging and place in a microwave-safe bowl. 

Microwave: Microwave from frozen for 5 minutes. Stir the contents to check if warmed through. Heat for another 1-3 minutes if needed.

Stove: Place contents (not bag) in a saucepan. Add a tablespoon of water, to stop contents from burning. Warm up on medium heat until the contents are steaming and gravy is gently bubbling.
